The
combination of light lemon and earthy thyme is an elegant
combination for scones at tea time. Generously slathered with
Niagara Presents' Chardonnay Jelly, these scones are a superb
treat. Serve with whipped or clotted cream for an even greater
indulgence!
3 c all purpose flour
1/2 c sugar
2 1/2 tsp baking powder
1/2 tsp baking soda
1 tsp salt
zest and juice of 1 lemon
2 tsp fresh thyme, chopped
1/2 c unsalted butter, cut into pieces and chilled
1 c + 1 Tbsp milk
110 ml jar Chardonnay Jelly
Preheat
oven to 375 F. Blend together flour, baking powder, baking
soda, salt, lemon zest and thyme. Cut in butter until the
texture of coarse meal. Mix together lemon juice with 1 c
of milk and add to scone mixture. Mix just until dough comes
together.
On
a lightly floured surface, roll out scone dough to just under
1/2 inch thick. Cut into desired shapes (I like hearts or
triangles) and place on a parchment-lined or greased baking
sheet. Brush with remaining 1 Tbsp milk. Bake for 20 minutes.
Serve
warm with butter and spread generously with Chardonnay Jelly
immediately before indulging!
